Mexican beef stew

Mexican beef stew


2lbs beef stew meat
1 28 oz can whole tomatoes
1 onion
1 tsp chili powder
1 pk taco seasoning
1 can black beans
1 can mexicorn
carrots
rice

1) add carrots, beef, tomatos, onion and powder to slow cooker

2) cook on low for 10 hours then add taco seasoning, beans, and corn. cook on high another 30 min and serve with rice.

  1. I made this today for dinner & it turned out great! I threw in a bunch of baby carrots to line the bottom & then added 2lbs frozen stew meat & 2 14 oz cans of peeled, diced tomatoes along with onion powder. I cooked that approx. 10 hrs & then added the taco seasoning, corn & beans. I had things to do before dinner so I cooked in for another 2+ hrs on low. I made brown long grain rice in the rice cooker that was seasoned with beef bouillon. It was a big hit which is great because my family can be picky (hence the onion powder & not fresh onions.) Definitely a keeper & will make again! Thanks for posting this! :)
